Don't Fumble the Food: Tips and Tools for Safe Tailgating PDF Print E-mail

(ARA) - Football fans across the country are in the midst of another exciting season of gridiron action. No matter which team you cheer for, tailgating is a longstanding tradition of uniting friends and food. But tailgating season is also a good time to take a closer look at your food preparation and serving habits. When enjoying food outside with a group of people, be sure to follow the proper food safety techniques to keep your friends and family safe from food-borne illness.

Safety First

“I’m a pigskin fanatic and come from a very fan-friendly university, so I see firsthand how easy it is to become distracted before the big game and let food safety slip to the back burner,” says Dr. Sereana Dresbach, a food safety expert and former professor at Ohio State University in Columbus, Ohio. “But the combination of get-togethers that can last all day with eating outdoors makes it especially important to keep food safety top of mind when tailgating.”

Whether you fire up a simple charcoal grill with a few friends or put on a full buffet table for a crowd, a few portable food preparation items and simple changes to your routine will ensure you tailgate safely:

* For grilling, don’t forget your food thermometer and alcohol gel sanitizer, along with two sets of grilling tools (such as tongs and forks), a cook’s timer and extra sets of serving platters.

* Use separate coolers for food and drinks. That way your guests won’t be continually opening the food cooler and changing the internal temperature so your food will stay cold until you’re ready to eat.

* While traveling to and from the game keep your coolers inside of the car rather than the trunk, which tends to be warmer.

Game Time

“The number one rule is to keep your hands, cooking utensils and serving platters clean and free of bacteria,” says Dr. Dresbach. “If no outdoor or portable sink with soap and water is available, make sure to clean your hands after handling raw meat by using an alcohol gel sanitizer and rubbing your hands together for at least 20 seconds to ensure they are clean.”

Dr. Dresbach also offers the following food preparation play-by-play for firing up the grill at your football feast:

* Use a food thermometer to cook foods to their proper internal temperatures. A thermometer is the best way to ensure safety and determine the doneness of meat and poultry. Insert the thermometer sideways 2 inches into a hamburger and make sure the internal temperature reaches 160 degrees F.

* Avoid cross-contamination by using extra serving platters or heavy-duty plastic wrap. Use separate plates for raw and cooked foods. Or, if you only have one plate, wrap the plate in plastic wrap to carry raw foods to the grill. When the raw food is on the grill and your hands are clean, remove and discard the plastic wrap, leaving you with a clean plate.

* Remember the marinade mandate: once the marinade has been in contact with uncooked meat, toss it out. Only marinade that has been brought to a rolling boil can be used as a sauce.

Post-game Pointers

“Quarterbacking a successful tailgate means sticking to a game plan of safe food preparation before, during and after the party,” says Dr. Dresbach. Follow these tips once you’re finished with the meal to ensure everyone stays safe from start to finish:

* Don’t leave food out for prolonged periods of time unless you are able to keep hot foods hot and cold foods cold. Set a timer for two hours so you will know when the food should be packed up properly or thrown away.

* If you have leftovers from your tailgate, be sure to pack them away immediately in a cold cooler. Leftovers should be stored in shallow containers (two inches or less) for quick cooling and to prevent bacteria from growing. If the outside air temperature is too hot to allow the food to stay cold, dispose of your leftovers.

* Once you are home, wash all cooking utensils and platters thoroughly in warm, soapy water.
